Who doesn't love waking up and NOT having to take the time to make yourself a healthy and delicious breakfast... but getting to enjoy one anyway? Lindsay Mustard's chocolate-y delicious overnight oats are perfect for those busy days when you need all your nutrients AND all those precious extra minutes of sleep. Double or triple the recipe, throw some berries on top on your way out the door, and you'll be so proud of yourself for dialing in your healthy, balanced breakfast all week long!
Serves 2
Ingredients:Â
- 1 cup rolled oatsÂ
- 1 scoop vegan chocolate or vanilla protein powder
- 1 cup unsweetened almond milk
- 2 tbsp unsweetened cocoa powder
- 2 tbsp maple syrupÂ
- 1 tbsp chia seedsÂ
- 2 tbsp chocolate chipsÂ
- Coconut whipped "cream" topping
Directions:
- In a large mixing bowl, add the oats, protein powder, cocoa powder, almond milk, maple syrup and chia seeds. Stir until combined.Â
- Add the chocolate chips and stir again.Â
- Let the mixture sit in the fridge for at least 2 hours (overnight is best).Â
- Transfer to serving bowls, top with coconut whipped cream and additional dark chocolate chips!
